Sweet-Potato Spoon Bread, Gluten-Free Naturally

Naturally Gluten-Free Desserts
Sweet Potato Spoon Bread w/Pecan Caramel Sauce
Serves 6 people

Spoon Bread

INGREDIENTS

2 Cups Roasted Sweet Potatoes
1 ¼ Cup Brown Sugar
3 Large Eggs
1 Cup Milk
1 Cup Orange Juice
2 Tbs Vanilla Extract
½ Tsp Ground Cinnamon
¼ Tsp Ground Ginger
¼ Tsp Salt

DIRECTIONS
Preheat oven to 350F
6 Ramekins, buttered
Baking sheet

In a food processor, pulse all ingredients until smooth. Divide sweet potato mixture among ramekins; place on baking sheet and bake until golden and slightly puffed up, about 30 minutes. Allow to cool for 10 minutes, top each spoon bread with a scoop of the salted caramel pecans, and serve.

Caramel Sauce

INGREDIENTS

1 Cup Sugar
1/3 Cup Water
¾ Cup Heavy Cream
2 Tbs Butter
1 Tsp Vanilla Extract, optional
1 Tsp Sea Salt
1 Cup Pecan Pieces, toasted

INSTRUCTIONS

Add the sugar to a heavy bottomed saucepan, and then shake it so it lies in an even, flat layer. Add the water to fully moisten the sugar. Place the pot over medium heat and cook (do not stir!) until the sugar dissolves and turns clear, a few minutes. It will look cloudy at first, but eventually give way to a clear, bubbling liquid. Raise the heat to medium high, and cook the caramel until it turns amber colored, about 10 minutes. Continue to cook the caramel, and watch as it begins to take on an amber color. Do not leave the caramel’s side, and have 3/4 cup of heavy cream standing by.

Once the caramel has gotten a golden color, like honey, turn off the heat and immediately add the heavy cream, stirring gently. This will stop the caramel from continuing to cook. Now add two tablespoons of butter and continue stirring until the caramel has an even texture. 

If it's still clumpy, turn the heat back on to medium, and gently stir for a few minutes until it's smooth. When finished cooking, add the sea salt, pecan pieces and vanilla, if desired.  Let the caramel sauce cool to room temperature before using. Caramel can also be stored in a glass jar in the refrigerator, bring back to room temp before using.

Cake can be served slightly chilled or room temperature.

Seasoned Sour Cream Dip, Gluten-Free Naturally

Seasoned Sour Cream Dip
Makes 2.5 cups
 
INGREDIENTS
 
1 Cup Mayonnaise
1 Cup Sour Cream
2 Tbsp Lemon Juice
1 Tbsp Worcestershire Sauce
½ Tsp Dried Parsley
½ Tsp Garlic Salt
½ Tsp Paprika
½ Tsp Salt
¼ Tsp Cayenne Pepper
¼ Tsp Pepper
 
INSTRUCTIONS

 
In a medium bowl, combine the mayo and sour cream. Add lemon juice, Worcestershire, parsley, garlic salt, paprika, salt, cayenne pepper and pepper. Mix well and refrigerate for a minimum of 1 hour before serving. Enjoy this dip with fries or a platter of veggies.

Italian Wedding Cookies, Gluten-Free Naturally

Naturally Gluten-Free Cookies
ITALIAN WEDDING COOKIES, NF DF

INGREDIENTS
 
1 Cup DF Butter, softened
½ Cup Powdered Sugar
¼ Tsp Salt
1 Tsp Vanilla
2 Cups GF Cup4Cup Flour Blend, any brand
Extra Powdered Sugar, for rolling
 
INSTRUCTIONS
Preheat oven to 350°F
Cookie sheets lined with parchment paper
 
In a mixing bowl, cream the butter with the sugar, salt, and vanilla extract. Beat until light and creamy to trap some air in the butter.  Add the flour to the butter mixture, and gently mix on low speed until well combined. With a medium cookie scoop or tablespoon scoop dough into your hands and roll into 1" in diameter balls and place on lined cookie sheets.
 
Bake the cookies for 15 minutes, or until the cookies start to turn golden brown. Remove the cookies from the oven and allow them to cool slightly. If the cookies are too warm during this last step, it will melt the sugar into a sticky mess. Put some of the extra powdered sugar into a bowl and roll the cookies in the sugar to coat.

Chili Lime Sweet Potatoes, Gluten-Free Naturally


Naturally Gluten-Free Meals
Chili Lime Roasted Sweet Potatoes

INGREDIENTS

3 Sweet Potatoes, cut in half lengthwise
6 Tsp Olive Oil
3 Tbs Honey
1 ½ Tsp Chili Powder
1 ½ Tsp Paprika
1 ½ Tsp Cayenne, optional
Salt & Pepper, to taste
2 Limes, zest & juice
Fresh Chopped Parsley

INSTRUCTIONS
Preheat oven to 400F
Baking Tray, lined with parchment paper

In a small bowl mix the dry spices, chili powder, paprika, cayenne if using, and set aside. Brush each sweet potato half with olive oil, skin included and score the top halves (interior flesh) with a knife. Season the entire sweet potato with salt and pepper and arrange on the baking tray, cut side up. Bake for 20 minutes.

While the potatoes are baking, mix the honey, zest, and juice in a small bowl and set aside. When the potatoes are done, remove from oven and drizzle the top halves with honey mixture and return to oven to bake for another 10 minutes. Once the sweet potatoes are tender, remove from oven. Transfer to a serving platter, or individual dishes, sprinkle with parsley and enjoy while still warm.

Bacon Wrapped Dates W/Goat Cheese, Gluten-Free Naturally

Bacon Wrapped Dates W/Goat Cheese
Serves 8 people

INGREDIENTS
8 Slices Bacon
16 Dates
4 Ozs Goat Cheese
Toothpicks

INSTRUCTIONS
Preheat the oven to 350ºF
A rimmed baking sheet with an oven-safe rack set inside

Pre-cook the bacon by arranging the slices in a single layer the rack set inside, careful not to stretch the slices too much. Place the pan in the preheated oven and set the timer for 20 minutes. Do not overcook; the slices should still be very soft and pliable. When done, immediately place the bacon on paper towels to drain and cool off.

Slice the dates lengthwise on one side to create an opening and remove the pit. Using a spoon, stuff a small amount of goat cheese into the cavity of each date and press the sides together to close. Cut the bacon slices in half. Wrap each date with a slice of bacon and secure with a toothpick.

Arrange evenly on the baking rack and bake for 10-15 minutes, depending on how well cooked you prefer your bacon.  When done, immediately place on paper towels to drain and cool off. When cool enough to touch, arrange on serving plate. Can be served warm or at room temperature.

Pork Corton, Gluten-Free Naturally

French Canadian Pork Spread
Makes 5-6 Cups
100 Year Old Vintage Recipe
 
INGREDIENTS

1 Lb Ground Pork
1 Lb Hamburger
1 Large Onion, Chopped
Salt
Ground Allspice
 
DIRECTIONS
 
Put meat together in large saucepan and mash well to separate.  Mix in onion and stir well and add enough water to cover.  Add allspice, enough to cover surface, and salt to taste and mix well.  Turn heat to medium high and bring to a soft boil, stirring frequently to break up the meat. When boil begins turn heat down just enough to continue simmer. Take a teaspoon of the mix; put it on a saucer and chill about 5 minutes before tasting. If not enough spice or salt, adjust and continue cooking.
 
Continue to cook about 1-2 hours, stirring occasionally, until reduced by two-thirds.  Remove the pan from the heat and cool slightly. While still slightly warm stir to incorporate all the fat and pour into 1 cup glass containers, cover tightly.  Can be frozen, or stored in refrigerator.  Serve chilled on toast or crackers.

TZATZIKI SAUCE DF
Makes 6 servings

INGREDIENTS

2 Cups DF Greek Yogurt, or 2 small containers
2 Cucumbers, peeled, seeded & grated
½ Tsp Sea Salt
¼ Tsp White Pepper
2 Tbl Lemon Juice
2 Tbls Olive Oil
2 Cloves Garlic, minced, crushed
2 Tbls Fresh Dill, chopped
1 Tsp Fresh Mint, chopped (optional)

INSTRUCTIONS

Line a fine strainer with a coffee filter and set over a bowl so that the bottom doesn’t touch. Grate the cucumbers and put into the lined strainer and refrigerate for 1 hour or longer.

When ready to prepare the Tzatziki, take out the strainer and discard any liquid in the bowl. Gently press the cucumbers to remove any excess liquid. In a medium bowl combine all of the remaining ingredients and add the yogurt and mix well. Gently fold in the grated cucumbers. Transfer to a serving dish and refrigerate until needed. Serve cold and store any leftovers in an airtight container in the refrigerator.

NOTE: To make DF Greek Yogurt at home, begin with any DF yogurt. Line a fine strainer with 2 coffee filters and set over a bowl so that the bottom doesn’t touch. Pour the yogurt into the lined strainer and refrigerate overnight. When ready to prepare the Tzatziki, take out the strainer and discard any liquid in the bowl.

Salmon Croquettes, Gluten-Free Naturally

Salmon Croquettes with Cranberry Relish

INGREDIENTS

12Oz Baked Salmon Fillets
½ Cup Green Onion, chopped
½ Cup Baked Sweet Potato, smashed
1 Clove Roasted Garlic
½ Tsp Sea Salt

Cranberry Relish (recipe below)

INSTRUCTIONS
Preheat oven to 350F
Baking tray lined with Parchment paper

Place everything but the Salmon in a food processor and pulse to combine. Add Salmon and pulse to combine, but be careful not to over process. Shape into patties and top each patty with a bit of Cranberry Citrus Relish. Arrange on tray and bake for 30 minutes.

Citrus-Cranberry Relish
Makes 1½ cups

INGREDIENTS

1½ Cups Fresh Cranberries
¼ Cup Fresh Mint
1 Orange, zest and juice
4 Dates
¼ Tsp Sea Salt

INSTRUCTIONS

Place all ingredients in a food processor and pulse lightly until ingredients are coarsely chopped. Relish should be stored in a glass jar in the refrigerator.  Serve chilled.

New England Tartar Sauce, Gluten-Free Naturally

Naturally Gluten-Free Sauces
New England Tartar Sauce
Makes about 1 ½ cups

INGREDIENTS

½ Cup Dill or Sweet Relish
¼ Cup Red Onion, sliced thin, chopped very fine
OR
¼ Cup Pickled Red Onion, chopped very fine (recipe below)
1 Scallion, chopped very fine
¼ Tsp Sriracha Sauce
1 Tbls Honey
1 Tsp Capers, drained, finely diced
¼ Tsp Dry Mustard
¾ Cup Mayonnaise

INSTRUCTIONS
In a small bowl, mix all ingredients until well combined. Store in a glass container in the refrigerator and enjoy with your favorite seafood dish.


Pickled Red Onions
Makes about 1 quart

INGREDIENTS

1 ½ Lbs Red Onion, peeled, cut in thin half-moon slices
1 ½ Cups Cider Vinegar
½ Cup Sugar
1 Teaspoon Salt
1 Jalapeno, seeded, sliced into thin circles
1 Small Bunch Cilantro, tied with string

INSTRUCTIONS

In a medium pot, bring all ingredients to a quick boil, cover and turn off the heat. Allow the pot to sit on the burner as it cools for five minutes. Remove the cover, and remove and discard the cilantro, and continue to cool to room temperature. Store in a glass container in the refrigerator and enjoy as needed.
