Naturally Gluten-Free Cookies
ITALIAN WEDDING COOKIES, NF DF
INGREDIENTS
1 Cup DF Butter, softened
½ Cup Powdered Sugar
¼ Tsp Salt
1 Tsp Vanilla
2 Cups GF Cup4Cup Flour Blend, any brand
Extra Powdered Sugar, for rolling
INSTRUCTIONS
Preheat oven to 350°F
Cookie sheets lined with parchment paper
In a mixing bowl, cream the butter with the sugar, salt,
and vanilla extract. Beat until light and creamy to trap some air in the
butter. Add the flour to the butter
mixture, and gently mix on low speed until well combined. With a medium cookie
scoop or tablespoon scoop dough into your hands and roll into 1" in
diameter balls and place on lined cookie sheets.
Bake the cookies for 15 minutes, or until the cookies
start to turn golden brown. Remove the cookies from the oven and allow them to
cool slightly. If the cookies are too warm during this last step, it will melt
the sugar into a sticky mess. Put some of the extra powdered sugar into a bowl
and roll the cookies in the sugar to coat.
