NO-BAKE FUDGE COCONUT COOKIES
Makes 3-1/2 dozen
INGREDIENTS
1 ½ Cups Sugar
2/3 Cup Milk
½ Cup Baking
Cocoa
½ Cup Butter
½ Tsp Salt
1/3 Cup Creamy
Peanut Butter
1 Tsp Vanilla
Extract
2 Cups
Quick-Cooking Oats
1 Cup Sweetened
Coconut
½ Cup White
Baking Chips
1 Tsp Shortening
DIRECTIONS
Large cookie
sheet lined with parchment paper
In a large
saucepan, combine the first 5 ingredients. Bring to a boil, stirring
constantly. Cook and stir 3 minutes. Remove from heat; stir in peanut butter
and vanilla until blended. Stir in oats and coconut. Use a medium cookie scoop
or teaspoon to portion out the dough onto parchment-lined baking sheets.
In a microwave, melt baking chips and
shortening; stir until smooth. Drizzle over cookies. Refrigerate until set. Store
the cookies in an airtight container.
