Naturally Gluten-Free Cookies
NO-BAKE CHOCOLATE-OAT COOKIES
Makes About 50 Cookies
INGREDIENTS
2 cups granulated Sugar
8 tbsp Butter
1⁄2 cup cocoa powder
1⁄2 cup Milk (or Milk Substitute)
3 cups Quick-Cooking Oats (Certified GF)
1 cup finely chopped Walnuts or Pecans
1 tsp Vanilla Extract

INSTRUCTIONS
Bring sugar, butter, cocoa powder, and milk to a boil in a 4-qt saucepan. Cook until sugar is dissolved and butter is melted, about 2 minutes. Remove from heat; stir in oats, walnuts, and vanilla extract. Use a small/medium Cookie Scoop or Tablespoon and drop cookies onto a waxed paper-lined baking sheet; chill until firm, about 10 minutes.
