Honey Banana Brownies, Gluten-Free Naturally

Naturally Gluten-Free Desserts
HONEY BANANA BROWNIES

INGREDIENTS

1 Egg
½ Cup Nut Butter
1 Ripe Banana
¼ Cup Honey
¼ Cup Unsweetened Cocoa Powder
1 Tbsp Cornstarch
½ Tsp Baking Soda
2 Tsp Vanilla Extract
¼ Cup Chocolate Chips, optional

INSTRUCTIONS
Preheat your oven to 350°F
Prepare an 8 x 8 baking pan with parchment paper

In a mixing bowl, add all the ingredients, except for the chocolate chips, and mix until the batter is smooth. Lastly, stir in the chocolate chips by hand if you’re adding them to the brownies.

Pour the batter into your prepared baking pan, using a spatula to distribute it evenly. Bake for 25-30 minutes, until a toothpick inserted into the center comes out clean.  Remove the brownies from the oven and let them cool in the pan for about 15 minutes before transferring them to a wire rack to cool completely.

Nut Butter Cookies, Gluten-Free Naturally

Naturally Gluten-Free Cookies
CHOCOLATE NUT BUTTER COOKIE SANDWICHES
Makes 12 cookie sandwiches

INGREDIENTS

Cookies
1 1/4 Cups Nut Butter
1/4 Cup Honey
1/4 Cup Sugar
2 Large Eggs
2 Tsp Vanilla
1/3 Cup Dark Cocoa Powder
1 Tsp Baking Soda
1/4 Tsp Salt
1/2 Cup Semi-Sweet Chocolate Chips, melted

Nut Butter Filling
3 Tbls Butter
1 Cup Nut Butter
1/2 Cup Confectioners' Sugar

DIRECTIONS
Preheat the oven to 350°
Line a baking tray with parchment paper

Give the nut butter a good stirring with a spoon or a knife. This is to help redistribute the oil. In a large bowl, mix all the cookie ingredients together except for the melted chocolate. Once it's thoroughly combined, mix in the chocolate. At this point, the dough will be very wet and seem a little oily. That's totally normal but refrigeration will take care of that. Cover the bowl and refrigerate the dough for 1 hour or until it's no longer sticky and it's easy to handle.

Meanwhile, prepare the filling. In a medium bowl, mix together all the filling ingredients until well combined. Allow to chill in the refrigerator.

Use a medium cookie scoop or tablespoon and place the balls about 1 1/2" apart on the prepared baking tray. Bake for 6-8 minutes or just until the top of the cookies appear baked. If they appear puffy don’t worry, they should deflate while cooling.  Remove the cookies from the oven and let them cool completely on the baking tray. Once the cookies have completely cooled, assemble the cookie sandwiches by placing some of the filling between two cookies. There should be enough filling to make 12 finished sandwiches.  Store the cookies in an airtight container in the refrigerator for up to 1 week.

Ketchup, Tomato-Free, Gluten-Free Naturally

Naturally Gluten-Free Condiments
CARROT KETCHUP, Tomato-Free
2 cups
 
INGREDIENTS
 
4 Carrots, 3 orange and 1 purple
1 Apple
2 Small Red Onions
1 Tsp Coconut Oil
¼ Tsp Salt
¼ Tsp Turmeric (optional)
¼ Tsp Paprika (optional)
 
Reserve cooking liquid
 
DIRECTIONS
Food Processer or Stick Blender
Glass Storage Container
 
Clean and peel the carrots and the apple and place in a pot over medium heat, adding just enough water to barely cover them. When ready to check the carrots and apples for doneness test by pricking them with a fork, if the carrots fall off the fork they’re ready.
 
Peel the red onions and cut them into quarters. Fry the onions in a bit of coconut oil in a pan, until they begin to caramelize.
 
Place all ingredients into the food processor or a tall bowl if using a stick blender. Pulse until the ingredients begin to thicken and become smooth and creamy.  Use the cooking liquid as needed to adjust the consistency after blending.
 
Store Ketchup in an airtight glass jar in the refrigerator to use as needed.

Chocolate Oat Cookies, Gluten-Free Naturally

Naturally Gluten-Free Cookies
CHOCOLATE-OAT COOKIES
Makes About 50 Cookies

INGREDIENTS

2 Cups Granulated Sugar
8 Tbsp Butter
1⁄2 Cup Cocoa Powder
1⁄2 Cup Milk
3 Cups Quick-Cooking Oats (Certified GF)
1 Cup Pecans, finely chopped
1 Tsp Vanilla

INSTRUCTIONS
Large cookie sheet with parchment paper
 
Bring sugar, butter, cocoa powder, and milk to a boil in a 4-qt saucepan. Cook until sugar is dissolved and butter is melted, about 2 minutes. Remove from heat; stir in oats, pecans, and vanilla. Use a medium cookie scoop or teaspoon to portion out the dough and drop cookies onto parchment paper-lined baking sheet; chill until firm, about 10 minutes.

Avocado Lemon Dip

Naturally Gluten-Free Dips 
AVOCADO/LEMON DILL DIP

INGREDIENTS

1 Cup Zucchini, peeled and chopped
½ Avocado
1 Tsp Lemon Zest
1 Tbls Lemon Juice
½ Tsp Honey
1 Tbls Olive Oil
1 Tsp Fresh Dill, Chopped
Pinch of Salt

INSTRUCTIONS

In a small pot over medium high heat, simmer zucchini in small amount of water for 5 minutes and then drain. Transfer to a blender, or tall bowl if using a stick blender, and add all the remaining ingredients. Blend until smooth and creamy, tip into a serving bowl and garnish with an extra bit of chopped dill if desired.

Savory Coconut Congee, Gluten-Free Naturally

Naturally Gluten-Free Meals
SAVORY COCONUT CONGEE

INGREDIENTS
1 Cup Brown/Wild Rice
1 Can Coconut Milk 
3 Cups Vegetable Broth
1 Tbl Fresh Ginger, minced
Salt to taste

DIRECTIONS
In a small crock-pot combine the rice, coconut milk, water, and ginger and add a touch of salt if desired. Give everything a good stir and turn the crock-pot on high to get things started. Once things begin to bubble, cover the crock-pot and turn the heat down to low and let simmer all day or overnight.

Enjoy warm by itself or with your favorite add-ins:

Eggs – Poached, Fried or Even Hard Boiled
Fresh – Scallions, Mushrooms
Herbs – Cilantro, Mint, Shiso, Basil, Parsley
Julienned – Cabbage or Carrots

Cheese and Egg Soufflé

Naturally Gluten-Free Meals
CHEESE AND EGG SOUFFLÉS
Serves 3 People

INGREDIENTS

6 Eggs
1⁄3 Cup Milk
Garlic Salt, Onion Salt, to taste
Pink Sea Salt, White Pepper, to taste
Shredded Cheese, any kind
3 Slices Cooked Bacon, crumbled

DIRECTIONS
Preheat oven to 375F
3 Individual Ramekins, buttered

In a medium bowl, mix eggs, milk, garlic, onion, salt, and pepper. Whisk vigorously until frothy and set aside. Place cheese and bacon crumbles into the ramekins and fill to about ½ full. Pour egg mixture into ramekins and fill to top. Place the ramekins on a cookie sheet and bake for 30 minutes until high and fluffy. Serve immediately.

PeanutButter Cookies, Gluten-Free Naturally

Naturally Gluten-Free Cookies
PEANUT BUTTER COOKIES

Makes 3-4 Dozen Cookies


INGREDIENTS

2 cups Peanut Butter (Creamy or Chunky)
1 cup Sugar
1 cup Light Brown Sugar
2 eggs
1 tsp Vanilla Extract
2 tsp Baking Soda
1⁄2 tsp Salt
1⁄2 tsp Cinnamon
Course Sugar or Salt for tops (Optional)

INSTRUCTIONS
Preheat oven to 350°
Two rimmed baking sheets with parchment paper

In a medium mixing bowl beat by hand the eggs, vanilla, baking soda, salt, and cinnamon until thoroughly combined, add the sugar and brown sugar and cream together before finally adding in the peanut butter and continue mixing by hand only until well blended.

Scoop peanut butter mixture into balls and place balls few inches apart on prepared baking trays. Flatten with moistened fingers or the tines of a fork in a perpendicular cross-hatch pattern. Sprinkle with sugar or salt before baking.

Bake 8-10 minutes until puffed and lightly golden at edges. Allow to cool on trays to set before removing.

Cajun Spice Mix, Gluten-Free Naturally

1 Tbls Oregano

Certifications to look for in the US


These are the Certifications to look for in the US

Always read labels, recipes and ingredients change constantly.

'Made in a facility' is generally considered safe for those with Celiac Disease.

'Made on shared lines' is a huge red flag and should be avoided.
'May contain' is a voluntary CYA (CoverYourA**) statement made to prevent litigation.

Oats do NOT contain gluten, but CC is a HUGE issue unless the oats are grown and processed under Purity Protocol standards...and that will be listed in the ingredients as purity protocol oats.

Soy does NOT contain gluten, but Soy SAUCE does.
Holiday treats, seasonal treats or specialty treats are always dangerous as those are often run fast on any available line and Cross Contact is a HUGE issue.

Just because it says 'Gluten-Free' doesn't mean it is. Check for certifications, and read the ingredients.

Gluten-Free Wheat Starch is real, also called Codex Wheat Starch, wheat starch is allowed in Gluten-Free foods as long as the final product contains less than 20ppm of gluten. However, wheat starch is NOT safe for those with wheat allergies.
