Herb & Goat Cheese Smashed Potatoes

Herb & Goat Cheese Smashed Potatoes
Gluten-Free, Cow Milk Free
Serves 4

 INGREDIENTS
1 ½ Lbs Red Potatoes, unpeeled, cubed
1 Tsp Salt
 
4 Oz Goat Cheese
½ Tsp Salt
½ Cup Coconut Milk, unsweetened
2 Tbls Plant Butter
2 Tsp Chives
½ Tsp Basil
½ Tsp Dill
¼ Tsp Oregano
¼ Tsp Pepper
 
INSTRUCTIONS
Place potatoes in a large pot or Dutch oven. Add enough water to cover the potatoes. Stir in 1 Tsp salt. Bring to a boil, then reduce heat, cover and simmer about 20 to 25 minutes, or until potatoes pierce easily with a paring knife. Remove from heat and drain.
 
While potatoes are boiling, place ½ Tsp salt and remaining ingredients in the bowl of an electric mixer. Add boiled, drained potatoes to the mixing bowl with the other ingredients and beat on medium speed until mostly smooth but still a bit lumpy. Beat longer for smoother mashed style potatoes. Add more coconut milk if needed to get consistency desired. Serve while still warm.
