Roasted Potatoes


ROASTED POTATOES
Serves 2-3 people

Ingredients
1 Lb Potatoes
1 Small Onion, diced
1 Tbs Olive Oil
1 Tbs Lemon Juice
2 Garlic Cloves, minced
Salt & Pepper, to taste

Instructions
Preheat oven to 375.
Chop potatoes into bite-sized pieces and place in roasting pan. Add onion and toss together.  In small bowl whisk oil, lemon juice, garlic, salt & pepper until blended and pour over potatoes, stirring to coat. Bake until golden and fork tender, about 35 to 45 minutes.
