Naturally Gluten-Free Meals
Chili Lime Roasted Sweet Potatoes
INGREDIENTS
3 Sweet Potatoes, cut in half lengthwise
6 Tsp Olive Oil
3 Tbs Honey
1 ½ Tsp Chili Powder
1 ½ Tsp Paprika
1 ½ Tsp Cayenne, optional
Salt & Pepper, to taste
2 Limes, zest & juice
Fresh Chopped Parsley
INSTRUCTIONS
Preheat oven to 400F
Baking Tray, lined with parchment paper
In a small bowl mix the dry spices, chili powder,
paprika, cayenne if using, and set aside. Brush each sweet potato half with
olive oil, skin included and score the top halves (interior flesh) with a knife.
Season the entire sweet potato with salt and pepper and arrange on the baking
tray, cut side up. Bake for 20 minutes.
While the potatoes are baking, mix the honey, zest, and
juice in a small bowl and set aside. When the potatoes are done, remove from
oven and drizzle the top halves with honey mixture and return to oven to bake
for another 10 minutes. Once the sweet potatoes are tender, remove from oven.
Transfer to a serving platter, or individual dishes, sprinkle with parsley and
enjoy while still warm.
