EXCELLENT BANANA
BREAD (DF)
Vintage Recipe
INGREDIENTS
½ cup solid shortening
2 Bananas, very ripe
2 Eggs
1¼ Cup GF Cup4Cup Flour, any brand
1 cup sugar
½ tsp salt
1 tsp soda
DIRECTIONS
Preheat oven 350F
Grease loaf pan
Blend bananas and shortening until smooth, add eggs one at a time, cream together. Add sugar, salt, and soda, mix well. Gradually add flour, mix only until moistened. Beat on high for a few minutes until light & fluffy. Pour into greased loaf pan and allow batter to sit for 15 minutes.
Bake for 1 hour, check for doneness by inserting toothpick into the middle of the cake. If it comes out clean, it's done. If not, bake another 10 minutes, and check again.
NOTE: If using a 8x8 cake pan, drop baking time to 40 minutes before checking for doneness.
