Irish Colcannon

Naturally Gluten-Free Foods
COLCANNON
Serves 6 people

INGREDIENTS
2 lbs Potato, peeled and cut
½ cup Butter
Several pieces Bacon or Sausage, finely chopped
½ small Cabbage, finely shredded
¾ cup Heavy Cream
Salt & Pepper to taste

DIRECTIONS
Tip the potatoes into a large saucepan of water and bring to a boil. Simmer for 15-20 mins, or until the flesh is tender when pierced. Meanwhile, heat quarter of the butter in a saucepan, then fry the bacon or sausage and half the cabbage for 5 mins. Turn off the heat and set aside. Drain potatoes in a colander and mash potato until smooth. Add cream with remaining butter and beat into the potato. Add bacon and cabbage to potato and mix. Then season with salt & pepper.
